Hi all! I thought I would start sharing some weekly menus that I prepare for my husband and myself. I love seeing what others prepare because it gives me new ideas. I hope this list will be useful for you. You can find these recipes in multiples on Pinterest so I’m not going to post them here.

Typically I only cook for me and my husband, so there are a lot of leftovers. Some of the leftovers are eaten with our lunch or as a snack. Side dishes are usually eaten more than once throughout the week. I’ll use the pork roast for a couple of other meals too. On Friday I’m making taquitos with frozen leftover taco meat that I had prepared a couple of weeks earlier. I use a pound of ground chuck to make tacos, but with only two of us eating I saved half of it for the taquitos.
